Do they boil for awhile before jarring them up or they only cool in the water bath? When you said you didn't worry about seeds did you mean you used cucumber seeds and all or didn't worry about pepper seeds? You know it is soooo HOT in Texas and when I have them in full sun a lot of them will go woody too.
