Quick Berry Jam For Busy Gardeners























This has got to be the quickest Berry Jam this side of Texas! It is fun to make, delicious and healthy too! 

There is No Cooking involved and only Four Simple Ingredients needed to prepare the jam. 

All you will need is Berries, Honey, Lemon and either Chia Seeds or Flax Seeds. Just be sure that everything you use is homegrown, pure, unprocessed or organic. 

For flavor and more nutrition we want to keep this a Honest Berry Jam.

Gardeners know all to well that as the berries become ripe and ready to harvest, it is also the busiest time of the season. 

Some of you that follow me on Facebook might remember me posting the photo above as I began cleaning and layering our strawberries for the freezer. 

I freeze our berries, (except the fresh we eat right away.) I know I can pull them down later on those in between not so busy days.

 Of course there are those times when it always seems busy! Thus, why this Quick Berry Jam tends to make life a whole lot easier.

















Now, I have to confess that I almost feel like the scene in Duck Dynasty when they discovered the Wild Bee Hive dripping with honey.

Grandpa was sure to tell his grandson how much Momma will love them for bringing home Wild Honey. He was right on this, I will confess!

Mr. Garden and his Bee Wrangling friend Jesse have been out a few times collecting Wild Hives. The picture above are from one of the first batches of honey extracted. 

Although I was elated to have the honey, Jesse cooked the first batch. I let Mr. Garden know that the next time they went wrangling that there will be none of that going on! 

I won that honey extracting battle and it was done here at home. No cooking and totally unprocessed, Beautiful isn't it?

For The Recipe

2 cups strawberries 
2 cups blackberries
2 TBSP honey
1 TBSP lemon juice
3 TBSP Chia Seed
1 TBSP Flax Seed Meal

Directions: Take the berries out of the freezer, measure them out into a glass or ceramic bowl and let them thaw out. Be sure to place a plate over the bowl while thawing

Once thawed, mash them up really good. Squeeze in the lemon juice, measure out the chia and flax seed and add the honey. 

Stir it up really good, almost whipping it together. Spoon the jam into clean jars and put on the lids to seal it. Put it in the refrigerator. 

This recipe makes 1 1/2 pints of Jam. It should be kept fresh and not processed. It will keep up to 2 weeks in the refrigerator. 

You can use all Chia Seeds or all Flax Seeds in this recipe. The seeds are what replaces the pectin and naturally thickens the jam.

Don't just use this jam on toast or biscuits! It is wonderful stirred down into your favorite Greek Yogurt or as a topping on your ice cream. It can make a wonderful dipping sauce when thinned down as well.

    1. I'm thinking you would need to prepare it a little differently for canning Patty. I've not tried it with the flax seed this way. Only for the refrigerator.
