Raw Honey Spiced Apple Pie

I wish I could have gotten a photo of the pie sliced, but Mr. Garden tore into it pretty good.

Okay, well.....Since I didn't finish making the pie until nearly 8 p.m. on a Sunday evening, I shall confess that I tore into it pretty good too!

I hadn't made Apple Pie since last fall and frankly all the fragrance in the kitchen was making us insane.

This PIE is so GOOD! It's an old fashion pie recipe that uses raw honey in place of a lot of the sugar. I also use some coconut oil in the crust.

Is it a healthier pie recipe? I really don't know! It's a Delicious PIE! It's made from scratch and it's all wholesome and organic ingredients.

 Pie Crust
(Makes a Double Pie Crust)

3 cups unbleached flour
4 tbsp. Raw Pure Cane Sugar
1 tsp. salt
6 tbsp. coconut oil (firm)
1 Stick plus 2 tbsp. Unsalted Butter (cold)
1/2 cup Very Cold Water plus 2 tsp. Apple Cider Vinegar
2 tbsp. Raw Pure Cane Sugar

I put the flour, sugar, salt, coconut oil and butter in my food processor and pulsed it on and off for about 10 minutes.

Once the flour became good and crumbly (kind of like tiny peas), I poured it all into a large mixing bowl.

It's important not to over work the dough for this next step.

I then poured about half of my water/vinegar mixture in and began hand mixing it together. I only added more water as needed. I was looking for a nice soft dough, but not sticky. I didn't quite use all of the water.

Divide the dough in half and make each half into a ball. I placed one half on a nice piece of parchment paper and began pressing it out into a circle.

Take the rolling pin at this point and begin to roll out from the center to the edges.

Once it is nice and round and looking thin, I take the whole sheet of parchment paper to my 10" glass pie plate, spread my hand and fingers over the pie crust side and turn it over, laying it down into the plate. The parchment paper pulls off easily.

Now I can careful adjust the crust to fit the plate and press it into place.

I then take the other half of dough and reuse the same sheet of parchment paper. Press the dough the same way and then fold the paper to cover it. Place it in the fridge until ready for it.

Apple Pie Filling Ingredients
(Preheat Oven to 375)

4 Very Large Granny Smith Apples
(6 to 8 medium)
1 Large Lemon for squeezing
1/2 cup Raw Pure Cane Sugar
1/4 cup Raw Organic Honey
1 1/2 tsp. fresh ground cinnamon
Good pinch of nutmeg
smaller pinch of cloves
3 pads butter
2 tbsp. flour

Wash, peel and slice the apples and squeeze the lemon over them right away. This helps keep the apples from turning brown while you get the rest of the stuff in the bowl.

Sprinkle in the sugar, flour and spices. Drizzle in the honey. Take a large spoon and get all the apples coated real nice.

Poor it in the pie crust and place the pads of butter on top.

Roll out the other half of dough on the parchment paper and lay it out on the top of the filling. Crimp the edges together all around the sides.

Make a few slits in the top and bake for about one hour.

Happy Gardening and Happy Pie Day!
