Lemon Bars - A Summer Time Treat


Lemons are so refreshing in the heat of summer. This is a quick and easy dessert to make on a hot day. I always recommend that you try and purchase fresh farm eggs for baking or maybe your lucky enough to have a few chickens of your own. There is nothing like the pure and natural richness of fresh organic farm eggs to add richness to your desserts. You will be surprised at how simple Lemon Bars are to make. First you will need:

Crust:
1/2 cup butter softened
1/4 cup sugar
1 cup all-purpose flour

For the Filling:
3/4 cup sugar
2 eggs
3 tbsp. lemon juice (fresh squeezed lemons are wonderful)
2 tbsp. all-purpose flour
1/4 tsp. baking powder
and Confectioners sugar

Cream together the butter and sugar until it's light and fluffy. Add the flour a little at a time until it's all well blended.
Press this into a 8 inch square dish. Bake it at 350 for about 15 to 20 minutes. The edges will become lightly browned.
While this is baking you can prepare the filling. Beat the eggs, sugar, lemon juice, flour and baking powder until light and frothy. Pour this over the crust when you take it out of the oven. Bake for an additional 10 to 15 minutes until it sets. Let it cool and then sprinkle on your powdered sugar. Cut into squares.
