Strawberry Fiesta Salad with Strawberry Balsamic Dressing


Sweet Garden Strawberries

Spring is a celebration of fresh garden goodness. It is the time for my favorite salad of the entire year. From the sweetest strawberries picked from the garden to that crisp baby spinach torn straight from garden to bowl.

Ingredients
Salad
Baby Spinach (rinsed clean)
Red Cabbage (sliced very thin)
Carrots (shredded)
Strawberries (sliced)
Florida Honey Tangerines (sectioned and deseeded)
Plump Organic Raisens
Sliced Toasted Almonds
Red Onion (sliced very thin)

Ingredients
Strawberry Balsamic Dressing
1 cup fresh strawberries
1/2 cup balsamic vinegar
1/2 cup red wine
3 tbsp raw pure cane sugar
3/4 cup extra virgin olive oil
1 whole lemon squeezed
1/4 cup fresh flat leaf Italian parsley, chopped
1 large garlic clove, minced
2 tbsp. red onion. minced
1 tbsp. Borage flowers
pinch of kosher salt

Directions
Combine vinegar, strawberries and red wine in saucepan. On medium heat bring to a slow boil. Stir in sugar until dissolved. Remove from heat to cool.
In food processor, combine parsley, garlic, red onion, borage, salt and lemon juice.Mix until smooth. Spoon mixture into the strawberry mixture and stir well. Add olive oil. Pour into jar and shake well. Keep in refrigerator until ready to serve.
